檸檬酸鋅為白色粉末,稍溶于水,易溶于稀鹽酸和堿性溶液中,分子量為610.37,幾何構(gòu)型為中心鋅原子與兩個(gè)檸檬酸的中間羥基及中間羧基和每一個(gè)檸檬酸的一個(gè)末端羧基相鍵合,構(gòu)成鋅的八面體結(jié)構(gòu)。美國(guó)的一些研究表明,停止人乳喂養(yǎng)的一歲嬰兒的發(fā)鋅值和血漿鋅值低于成年人,而一直用人乳喂養(yǎng)的嬰兒發(fā)鋅值和血漿鋅值維持成人水平。前者造成鋅值降低的因素可能是人乳中的鋅比牛奶中的鋅生物利用率高。而且有研究者研究發(fā)現(xiàn)人乳喂養(yǎng)的嬰兒比用奶粉即使是強(qiáng)化鋅奶粉喂養(yǎng)的嬰兒血漿鋅值高,根據(jù)這些研究結(jié)果,可以推斷人乳中存在一種嬰兒易吸收的鋅螯合物,它就是檸檬酸鋅。該結(jié)論已被人乳和牛奶的凝膠色譜所證實(shí),在母乳中檸檬酸鋅能改善鋅的吸收。檸檬酸鋅也存在于人體前列腺中,對(duì)精液的活動(dòng)具有一定影響,有研究發(fā)現(xiàn)在人體前列腺液和精液中,主要陰離子是檸檬酸,而氯離子濃度較低,說明大部分陽離子其中包括鋅是與檸檬酸結(jié)合的。在鋅和男性不育的試驗(yàn)中,研究了精液能動(dòng)中鋅的生理作用,發(fā)現(xiàn)小分子螯合鋅的濃度和精子活動(dòng)之間有一定的相互關(guān)系。

Zinc citrate also exists in the human prostate, has a certain impact on the activity of semen, some studies have found that in the human prostate fluid and semen, the main anion is citric acid, while the chloride ion concentration is low, indicating that most of the cations including zinc are combined with citric acid. In the experiment of zinc and male infertility, the physiological effect of zinc in semen motility was studied, and it was found that there was a certain correlation between the concentration of small molecule zinc chelate and sperm motility.
